Chicken Casserole

Ingredients
- 1 onion diced peeled
- 2 tbs olive oil
- 1 tsp mild curry powder
- 2 chicken breast fillets
- 1 red capsicum diced seeded
- 1 yellow capsicum diced seeded
- 2 carrots peeled and sliced
- 1 tbs chicken seasoning
- 1 tsp Worcestershire sauce
- 1 tbs cajun seasoning
- 1/2 tsp ground black pepper
- 120 ml dry white wine
- 200 g mushrooms
- 100 g frozen prawns optional
- 2 cups long-grain white rice
- 1 tsp saffron threads
- Heat the olive oil in a frying pan and cook the diced onion
- Add the curry to the onion.
- Cut the chicken breasts into small pieces and add to the onion. Cook for another 6 minutes.
- Add the capsicum and diced carrots to the other ingredients and continue cooking until the carrots become soft.
- Add the chicken seasoning, pepper, Worcestershire sauce, and Cajun powder and mix well.
- Add the white wine and simmer until it evaporates.
- Cut each mushroom into 4 pieces and add to the rest of the ingredients.
- Add the thawed prawns and cook for another 5 minutes.
- Cook the rice in salted water.
- Drain the rice, add the saffron and mix well.
- Serve casserole with rice.
