Eggless Christmas Plum Cake

Ingredients:

  • 1 tbsp each of finely sliced cashews, almonds, walnuts, golden raisins, black raisins, candied fruits
  • 2 tbsp prunes (dried plums)
  • 3/4 cup fresh orange juice or tetra-pack mix of fruit juice or grape juice
  • 1 pinch each nutmeg, cinnamon, dry ginger powder, 1/2 cloves powder
  • 1/4 tsp salt
  • 1 cup refined flour
  • 2 tbsp cocoa powder
  • 1/2 cup fine sugar
  • 1/2 oil or butter
  • 3 tbsp Milk
  • 1/2 tsp baking powder and 1/4 tsp baking soda

Cooking Instructions

Step 1

Soak dried fruits and nuts in fresh fruit juice or canned juice for one hour.

Step 2

Preheat Kadhai (big pan) with 2 cups of common salt. Place a ring or a stand in the Kadhai for keeping the cake tin. Ensure that the cake tin bottom is not touching the salt. Cover and preheat for 10 minutes.

Step 3

Sift together flour, cocoa powder, baking powder, clove powder, nutmeg powder, dry ginger powder, cinnamon powder, and salt.

Step 4
Add fine sugar, oil, or melted butter and add soaked dried fruits in the flour mixture, and mix nicely.
Step 5

Line the baking mold with butter paper and pour in the batter.

Step 6
Place this tin in a preheated Kadhai and bake the cake batter for 40 - 45 minutes. 
Step 7
Another option is to bake it in a preheated oven at 180 degrees for 35 to 40 minutes.
Step 8

Insert a knife to check if it comes out clean. If the knife is wet then bake it again for five min.

Step 9
If yes, remove the cake tin and keep it on a wire rack.
Step 10
Remove the cake from the cake tin after 15 min. 
Step 11
Slice the cake when it is completely cool. The yummy cake is ready.
