California Dried Peach Cobbler

Ingredients:

Sugar Mixture
1 C white sugar
3 Tbsp cornstarch

Fruit Base
1 lb California Dried Peaches (reconstitute*)
sugar mixture (see preparation instructions)
1 tsp cinnamon
1 tsp lemon juice
¼ C water
pinch of salt

Topping
1 ½ C All Purpose Baking Mix
4 Tbsp of butter, melted
1 C of milk

Preparation

*Reconstitute Dried Peaches
Put California Dried Peaches in a bowl, and pour hot water over the dried fruit to cover. Allow to reconstitute for 2 hours or overnight until plump.  Place peaches with the remaining liquid in an 8x8 square pan.

When ready, preheat oven to 350º.

Sugar Mixture
In a bowl, combine sugar and cornstarch until well blended and set aside.

Fruit Base
Place peaches in an 8 x 8 square pan.

Sprinkle peaches with the ¾ C sugar mixture (save ¼ C for the topping), water, cinnamon, lemon, and a pinch of salt

mix well with a fork and spread evenly in the pan.

Topping
In a large bowl, combine baking mix, melted butter, and milk, until it resembles a batter. 

Spoon over peaches.

Sprinkle the remaining ¼ C sugar mixture evenly over the top

Spoon ¼ C hot water over the mixture.  (This technique will give the cobbler a glaze).

Bake cobbler for 35-40 minutes, until lightly brown.
