Chicken Casserole

Ingredients

  • 1 onion diced peeled
  • 2 tbs olive oil
  • 1 tsp mild curry powder
  • 2 chicken breast fillets
  • 1 red capsicum diced seeded
  • 1 yellow capsicum diced seeded
  • 2 carrots peeled and sliced
  • 1 tbs chicken seasoning
  • 1 tsp Worcestershire sauce
  • 1 tbs cajun seasoning
  • 1/2 tsp ground black pepper
  • 120 ml dry white wine
  • 200 g mushrooms
  • 100 g frozen prawns optional
  • 2 cups long-grain white rice
  • 1 tsp saffron threads
Instructions :
  1. Heat the olive oil in a frying pan and cook the diced onion
  2. Add the curry to the onion.
  3. Cut the chicken breasts into small pieces and add to the onion. Cook for another 6 minutes.
  4. Add the capsicum and diced carrots to the other ingredients and continue cooking until the carrots become soft.
  5. Add the chicken seasoning, pepper, Worcestershire sauce, and Cajun powder and mix well.
  6. Add the white wine and simmer until it evaporates.
  7. Cut each mushroom into 4 pieces and add to the rest of the ingredients.
  8. Add the thawed prawns and cook for another 5 minutes.
  9. Cook the rice in salted water.
  10. Drain the rice, add the saffron and mix well.
  11. Serve casserole with rice.
